Introduction

French Hearts Cookies, also known as palmier cookies, are crisp, buttery, and beautifully caramelised pastries made from puff pastry, sugar, and cinnamon. With their attractive heart-shaped appearance and flaky texture, these cookies are ideal for tea-time service, bakery displays, and pastry training.

Ingredients

  • Puff pastry, room temperature – 400 g
  • Raw sugar – 100 g
  • Brown sugar – 20 g
  • Cinnamon powder – 10 g

Method

  1. Preheat the oven to 200°C and line a baking tray with parchment paper.
  2. Roll out the puff pastry into a rectangle about 14 x 12 inches.
  3. Sprinkle brown sugar, raw sugar, and cinnamon powder over the dough, keeping 20 g raw sugar aside for later.
  4. Lightly press the sugar and cinnamon into the dough using a rolling pin.
  5. Starting from one long side, roll the dough tightly to the centre. Repeat from the opposite side until both rolls meet in the middle.
  6. Chill the rolled log for at least 20 minutes.
  7. Cut into 1/4-inch thick slices and place on the prepared baking tray.
  8. Sprinkle the reserved raw sugar over the cookies and press lightly.
  9. Bake for 15 to 20 minutes or until puffed and golden brown.
  10. Transfer to a cooling rack and cool completely before storing in an airtight container.
